Why it’s deceptive

The Gentle Art of Deception

Three discoveries from hours of kitchen experiments.

Polenta for texture

Polenta gives our ginger and lemon cakes their crumb, a satisfying grit and a “no-sag” structure.

Apple for moisture

Bramley apple sauce keeps the cakes moist, and Bramley apples replace the suet in our Christmas fruit filling, melting into a natural “glue” that binds the fruit.

Milk powder for structure

Skimmed milk powder helps rebuild the structure of a cake that butter usually provides.

For the festive table

Christmas, made lighter

A fat-free, egg-free steamed pudding, a suet-free fruit filling, and mince pies to put it in.
